“Thank you to everyone, especially my family and friends, for always believing in me. As a young boy growing up in Jamaica, I remember watching my mother and beloved grandmother cooking authentic Jamaican dishes on Sundays. As I grew older, cooking became my passion. As a chef, I strive to provide top-notch service with quality, affordable food, using the same traditional style of cooking at your table.”
If I could travel back in time to revisit one of my finest moments, it would be one early morning. Just waking up, as I stepped out the front door, I was greeted with the smell of fresh coffee.
Looking up into the sky, I could see a light blue smoke, reminiscent of a magical cloud. Following that cloud, I could hear a rhythmic beating sound, almost like an African instrument. As I got closer, I saw a magical wooden outside kitchen with light blue smoke billowing out.
Upon arriving, I saw my grandmother sitting on a long, old wooden bench, grinding coffee beans. My great-grandma used to have one rule inside the kitchen: you could look, but you couldn’t touch.
But one day, I remember it clear as day. My great-grandmother was cooking, and as I sat there watching her every move, I realized that she couldn’t cook the way she used to. The pot became too heavy, the spoon too long. At that fine point in life, I realized the tradition was passed on to me.”

When most people think of Jamaica, they think of white sand beaches or pulsating reggae music. They rarely think of Jamaican food (although they might think of jerk chicken). However, Jamaica has a thriving food scene and in every corner of this little island, you will find a dish to wet your appetite.
